Program Overview

The programme is split between industry placements and online taught modules. At level 4, students divide their studies equally between 60 credits of online theoretical learning and 60 credits of restaurant-based practical placement. The course follows a three-term structure, with 40 credits per term (or 20 credits for part-time students).

The programme has strong ties with key employers and actively participates in industry skills networks. It evolves based on industry feedback, with partnerships including The Seren Collection, The Cygnus Group, The Secret Hospitality Group, and top chefs and sommeliers across the UK.

  • Produce, Provenance and Sourcing (20 credits; compulsory).

Employability is central to the programme. Along with restaurant and gastronomy-specific skills, it also fosters transferable skills like innovation, resilience, problem-solving, creativity, and an enterprising mindset.

Teaching is practice-led, with guest lectures, field trips to restaurants, food producers, and markets. Students will receive career guidance, skills development sessions, LinkedIn training, and mock interviews to boost confidence and improve their job prospects.
